Stuffed Baked Sweet Potatoes

Super simple, super delicious, and super CHEAP!  That’s right, it cost me less than $12 to make a dinner or otherwise 3 prepped meals. These Stuffed Baked Sweet Potatoes are a fun way to present a normal meal and also make an easy weekly meal prep.  When I make these for dinner, I like to have a lot of options available and let the kids go through everything buffet style and decide for themselves what toppings they want.  I have found that the more I can give my kids options, the less they complain about what they are eating.

So, below it may seem like there are a lot of ingredients, but there are ways to simplify even more.  #1 Buy pre-made taco seasoning.  I like to make mine because I know exactly what is in it and there is no sugar added.  #2  Buy pre-made Pico de Gallo.  I just like mine better than what I buy in the store.  #3  If you are going to make your own Pico, use minced garlic from a jar, about 1 tsp.

 

Ingredients:

3 Small Sweet Potatoes

1/2 Tbsp. Olive Oil

 

1 lb. 93/7 Ground Beef

1/2 tsp. Chili Powder

1/4 tsp. Cumin

1/4 tsp. Paprika

1/4 tsp. Garlic Powder

1/4 tsp. Onion Powder

1/4 tsp. Sea Salt

1/4 tsp. Ground Black Pepper

 

1 15 oz. Can Black Beans, Drained and Rinsed

 

2 Medium Tomatoes, chopped

1/3 Yellow Onion, diced

2 Tbsp. Cilantro, diced

1 Small Jalapeno, diced

1 Clove Garlic, minced

 

1 Avocado, sliced

 

Directions:

  1. Pre-heat oven to 400 degrees.  Line baking sheet with aluminum foil.  Wash sweet potatoes and dry.  Stab 5-6 times with a fork and then lightly coat with olive oil.  Put them in the oven for 50-60 minutes, or until easily smooshed from the outside.

     2.  Add beef and taco seasoning ingredients to a medium-large skillet.  Cook until browned.
     3.  Chop and dice tomato, onion, cilantro, jalapeno, and garlic.  Add to a large bowl and mix.

     4.  Rinse black beans and slice avocado.
     5.  When sweet potatoes are done cooking, let cool for a few minutes.  Carefully slice down the middle and split part.  Add toppings and enjoy!
*Side note:  I created this for 3 meals, dividing the meat also in 3.  This works out perfectly for meal prep or for a family meal because my kids split a serving.

    These look great. I ve gotten into a beetroot and feta baked potato stuffing rut, this is inspiring me to branch out.
