Rotisserie Chicken Salad

The best thing about this rotisserie chicken salad is there is absolutely NO cooking!  It takes less than 5 minutes to prepare and saves well in the refrigerator if you choose to use it as a weekly prep meal.  I have always made my chicken salad this way, but I was inspired to put it on an apple slice by a blog I found on pinterest called Yummy Addiction.  It adds great flavor!  If I am looking to cut some of the carbs/sugars out of my meal plan, I just ditch the apple and it is still delicious.

The average rotisserie chicken has about 1 pound of meat.  I like to weigh and measure what I’m making to keep my macros on track and every time I pull apart a chicken, it’s extremely close to that 1 pound.  These chickens are found in almost every store and make an appearance in my meal plan at least once a week 🙂

Ingredients:

1 Rotisserie Chicken – pulled and shredded

1/3 cup Mayo (I used grapeseed)

2 Green Onions, diced

1 Celery Stalk, halved and diced

2 Tbsp. Chopped Walnuts

2 Tbsp. Dried Cranberries

1 tsp. Garlic Salt

1 Pink Lady Apple, cored and sliced

Directions:

1.  Add all of the ingredients except for the apple in a large bowl.

2.  Mix

3.  Core the apple and slice

4.  Put rotisserie chicken salad onto apple slices and enjoy!

*Substitutions- I LOVE grapes in this recipe and sometimes a dash of your favorite seasoning goes a long way!
