Protein Powder Pancake

I love this recipe as a pre-workout meal!  It sits well in my stomach and gives me enough energy to make it through my workout.

This recipe makes 2 servings.  These save well in the freezer if you want to meal prep them.  Separate each pancake with a layer of parchment paper and they won’t stick together in your ziploc bag.

Ingredients:

1 medium banana

2 T. coconut flour

1.5 scoops of protein powder (I use Body Nutrition’s Chocolate Trutein)

1 egg

2 egg whites

1/4 t. baking powder

2 T water

 

Mix ingredients in blender or food processor.  Heat a lightly oiled (coconut oil) pan over medium low heat.  Divide batter in half and pour one portion into heated pan.  Cover and cook until lightly brown on both sides.

Protein:  27g / Carbs:  19g / Fat:  4g

1 T. almond butter & 1/4 c. strawberries

Calories: 104

Protein:  3g / Carbs:  7g / Fat:  8g
