Peanut Butter Banana Chia Seed Pudding

I love this recipe, not only because of how easy it is, but because my kids can’t get enough of it!  I am always trying to find healthy alternatives to typical childhood favorites and this chia seed pudding is definitely a win.  You won’t ever crave traditional pudding again!  This is my new go-to when I feel like I absolutely need a mid-week cheat and I don’t feel guilty because it is Paleo, so my digestive system loves it too 🙂

Chia seeds are awesome because they deliver a ton of nutrients without a lot of calories, they are full of antioxidants, almost all of the carbs are from fiber, and they are high in Omega-3 fatty acids.  Omega-3s are important because they can lower your cholesterol, reduce high blood pressure, protect you from heart attacks, ease joint pains, fight wrinkles and skin ailments, and improve your memory.



1 Small Banana

1/2 c. Coconut Milk (45. cal/cup)

1 Tbsp. Peanut Butter

3 Tbsp. Chia Seeds

  1.  In a food processor or blender, mix banana, coconut milk and peanut butter.
  2. When those ingredients are thoroughly blended, add chia seeds and mix by hand.
  3. Put in the refrigerator for 30 minutes and you are all ready to enjoy your delicious and healthy treat.
Yields: 2 servings
Calories per serving:  194     Carbs:  20g      Fat: 12g      Protein:  6g
