Paleo Valentine’s Treat

I feel like Valentine’s Day is so commercialized, but I can’t help but love it!  My mom would always go overboard for us, making beautiful homemade Valentines and special treats, so I have always felt the need to carry on the tradition with my kids.  Going overboard with these guys is probably an understatement though.  I make the boys wear special shirts and I take too many pictures, I surprise them in the morning with lots of treats and then make a Valentines themed breakfast and snacks, special desserts and dinner too.  Because of my obsession, I try to make it as healthy as possible.

Raspberry Chocolate Bark

Ok, so this Valentine’s treat technically may not be “healthy,” but with fresh fruit and paleo-ish chocolate, they are a better option to processed treats.  I swear, these Enjoy Life chocolate chips save me!  Still, I keep my portions in check, paleo doesn’t equal a free for all.  To me, they really don’t taste any different than the “real” milk chocolate version so I put these in and on almost all of my treats.

This has to be the easiest recipe that has ever been made.  Can it even be called a recipe if there are only 2 ingredients?

Ingredients:

1 package Enjoy Life Chocolate Chips

1 pint of Raspberries

So here’s what you do.

Directions:

  1. Line a baking sheet with parchment or wax paper.  Set cookie cutters down.
  2. Melt the chocolate chips in a glass bowl either in the microwave (stopping and stirring every 30 seconds until melted) or double broiler style by boiling water in a pan and placing the bowl in the water, stirring until melted.
  3. Fill the cookie cutters and spread evenly.
  4. Refrigerate for at least 15 minutes, until solid.
  5. Top with raspberries and drizzle melted chocolate on top.
