Paleo Mexican Fried Bananas

This was a very quick dessert and my family loved it!  I took a popular Mexican fried banana recipe and changed around some of the ingredients to make it paleo.  I should say paleo-ish because we topped it with coconut milk ice cream.  The warmth of the bananas fresh off the stove paired perfectly with the ice cream, although drizzling canned coconut milk on top is just as delicious!  We typically don’t have this sweet of a dessert on a regular basis (normal snack would be just the banana), but I do love to splurge on occasion.


4 bananas, halved and cut lengthwise

1 T. lemon

2 T. honey

1 t. cinnamon

3 T. butter


Melt butter over medium heat.  Combine lemon, honey and cinnamon and add to melted butter.  Swirl around until mixed and add bananas.  Saute bananas for 3-4 minutes and flip over.  Swirl the remaining side every minute or so to evenly spread the mixture for 3-4 more minutes.  The mixture should be almost completely caramelized and cooked away.
