Paleo Chocolate Bark

I love nothing more than handing out homemade goodies for Christmas!  That’s why I decided to come up with a natural treat to give out to my clients and family members this year.  I needed something that wouldn’t spoil in case someone didn’t get it right away, but was still indulgent, and that’s when I thought of chocolate bark!  Thanks to Enjoy Life chocolate chips I got to create this Paleo (paleo-ish for all you die hard people) bark that doesn’t have added sugar, but isn’t bitter like real dark chocolate.  It is super easy and the only time consuming part is the cute packaging.

Paleo Chocolate Bark is a great gift to hand out because it allows people to try a paleo treat and realize for themselves that natural foods can be just as delicious as the sugar filled foods they are used to.  I’m going to convince the world to eat all natural, one person at a time 😉

What I love most about this recipe is that it is easy to swap in your favorite nuts or dried fruits.  Another winning combo is walnuts and dried cherries, or pistachios and goji berries.  So many different options and they all taste amazing!  For those with nut allergies, just eliminate the nuts and sub shredded coconut.


10 oz. Enjoy Life Chocolate Chips

1/2 c. Dried Cranberries

1/2 c. Pecan Pieces

1 Tbsp. Shredded Coconut


  1. Line a baking sheet with wax paper.
  2. Melt chocolate by placing chips in a heat safe glass container (I used a Pyrex measuring cup) and set in a pan of hot water.  Mix until thoroughly melted.  You can also melt in the microwave, heating for about 3 minutes in a heat safe glass container if that’s easier for you!

     3.  Add all but 1 Tbsp. of cranberries and pecans to melted chocolate.  Stir and spread out evenly onto baking sheet.
     4.  Sprinkle on remaining cranberries and pecans, as well as shredded coconut.
     5.  Refrigerate for 30 minutes or until solid.
     6.  Break into pieces.  I like to use gloves so that I don’t melt fingerprints into the chocolate.
Decorate as you like!  I got these cute little decorated paper bags and gift tags from Hobby Lobby.  I also got decorated paper plates and cello bags to hold larger quantities for my family members.
