Paleo Banana Donuts

My donuts may not be the prettiest things you’ve ever seen, but they taste AMAZING!  Of coarse these don’t have the same texture as a regular fried donut, baked will always be much heavier, but considering real donuts are off the table for me, this all natural version certainly satisfies that sweet tooth.

I wish I could take credit for these paleo banana donuts, but I actually found this recipe a couple years ago at this great blog, Always and Forever the Stanleys.  I do a couple of things differently, mainly just leaving out the espresso and salt that they use on top of the chocolate.

For some reason I wasn’t thinking and only bought 1 donut pan.  I mean first of all it would be wrong to only make 6 donuts, and second, this recipe makes 10 lol!  So make sure to save yourself the trouble and just buy 2.

Now, in the original version of this recipe, you take a few ingredients and blend, then add the rest.  In the Jessica (that’s me!) version of this recipe, you throw every ingredient into the food processor and get it done with all in one shot!

Ingredients:

3 Bananas

7 Medjool Dates, pitted

3 Eggs

1/4 c. Coconut Flour

1/8 c. Honey

2 Tbsp.  Coconut Oil

1 1/2 tsp. Vanilla Extract

1 tsp. Cinnamon

1/4 tsp. Baking Soda

1/4 tsp. Baking Powder

1/8 tsp. Salt

*Optional- 1/3 c. Chopped Walnuts or Enjoy Life Chocolate Chips

1/2 c. Enjoy Life Chocolate Chips, melted

Directions:

  1. Preheat oven to 350 degrees
  2. Add all ingredients to a food processor and blend.
  3. Spray donut tray with cooking spray.  *They make coconut oil spray now!
  4. Fill donut tray to the top.  They will not fluff up, so don’t be afraid to get to the edge.
  5. Bake for 23-25 minutes or until firm.

Paleo Donuts

If they are not cooked long enough, they will break when they come out of the pan.  To make these paleo banana donuts come out extra smoothly, I like to take a tiny spatula and run it around the whole edge of each donut.  These are quite dense and super delicious!  They remind me of banana bread. I may or may not have strayed from my meal plan and eaten 3 😉
