Mango Salsa

This is such a fast and delicious recipe!  The jalapeno gives it a kick, but the sweetness from the mango offsets the spice perfectly.  My kids couldn’t get enough of it and even though I had made it to top the Crock Pot Shredded Beef Tacos, they used it as a chip dip too.


2 mangos, chopped to desired chunkiness

1/4 cup red onions, thinly diced

1 red bell pepper, chopped

2 jalapenos, diced

2 T. cilantro

1/2 lemon, juiced

salt & pepper to taste


Mix all of the ingredients together and serve!
