Individual Paleo Trifles

I should say that these are paleo-ish because I can’t find a homemade paleo whipped cream recipe that I can actually make, it turns out very wet every time!  If anyone can recommend one to me, I would love to try it! Since I was making these for a party, I took the easy way out and bought this new SoDelicious Coconut CoolWhip.



This is such a simple and beautiful recipe.  The freshness of the berries mixed with the light fluffiness of this lemon cake from Paleo Newbie is truly a treat.  I highly recommend their site for recipes and tips when transitioning to a paleo lifestyle.  This recipe made 12 servings, although everyone at the party wanted more!



2- 6 oz. containers Raspberries

1- package Strawberries

2- 6 oz. containers Blueberries

1- carton of Coconut Whip Cream

Dry Cake Ingredients

  • 1 1/2 cups Almond Flour
  • 3 Tbsp. Coconut Flour
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
Wet Ingredients
  • 2 Lemons, squeezed – about 1/3 cup of lemon juice
  • 2 tsp Vanilla
  • 3 Eggs, whisked
  • 1/3 cup Coconut Milk
  • 1/3 cup Honey
  • 2 Tbsp. melted Coconut Oil
  • Zest from 2 Lemons


  1. Preheat oven to 350 degrees.
  2. In a large bowl combine dry ingredients and in a separate medium bowl mix all of the wet ingredients.
  3. Add wet ingredients to dry and mix thoroughly.  Let set for about 5 minutes and then stir again.
  4. Lightly grease a bread pan with coconut oil (I couldn’t find mine ANYWHERE so I used this circle cake pan.  worked great!) and cut a piece of parchment paper to fit the bottom
  5. Bake 35-40 minutes or until it passes the toothpick test
  6. Let cool completely

Although it’s not the easiest to see in the picture I started this recipe with raspberries on the bottom, then crumbled the cake and followed it with whipped cream, blueberries and strawberries.  I hope you enjoy this fresh, summer, practically guilt-free treat as much as we did!
