Grilled Peach & Chicken Salad with Orange Poppy Seed Dressing

I made this recipe to be as simple as possible.  I sliced the chicken breasts in half to make them thinner since these days they are so big!  I lightly coated them with olive oil and a little salt and pepper.  I peeled the peaches, cut them into chunks and put them straight on the grill.


When it was done cooking I let it cool for a bit and added it to baby spinach and spring salad mix.  Top all of it with some slivered almonds and blackberries and done!  Try it with this awesome Orange Poppy Seed dressing that I got from my mom and adapted to a little healthier version.


Orange Poppyseed Dressing

1/4 c EVOO

1/4 c Coconut Oil

1/4 c Fresh Squeezed Orange Juice

2 tsp. Orange Zest

2 Tbsp. Lemon Juice

2 T Honey

2 tsp. Dijon Mustard

1/4 tsp. Salt

1 Tbsp. Poppy Seeds


Blend all ingredients, except seeds, together in blender or processor until emulsified.  Stir in seeds.
