Cucumber & Tomato Salad

This is such a simple and fresh summer recipe that really jazzes up plain lean protein options such as fish or chicken.  This time I paired the cucumber and tomato salad with pan-cooked tilapia, seasoned with Cajun spices.  I lightly sprayed the pan with coconut oil and cooked the tilapia for about 3-4 minutes on each side.  This was such a quick meal that I was eating only 10 minutes after I started throwing everything together!



1 Cucumber

1 Tomato, diced

1 thick slice of Red Onion, diced

1/2 Tbsp. EVOO

1/2 Tbsp. Red Wine Vinegar

Salt, Pepper & Basil to taste


Use a mandoline or Veggetti to make the cucumber noodles.  It is also just as delicious to cut the cucumber into chunks.  Add tomato, onion, EVOO, red wine vinegar and spices.  Toss and enjoy!  -makes 3 servings (saves well!)
