Citrus Avocado Vinaigrette

I made this Mexican inspired salad to go along with our Cinco de Mayo fiesta.  It accompanied the Crock Pot Shredded Beef Tacos with Mango Salsa perfectly!  There are so many options when it comes to the ingredients of your salad, but I chose a pretty basic combination.

Salad Ingredients:

Romaine Lettuce, one head, washed and chopped

1 bell pepper, chopped

4 green onions, diced

1/2 c. canned corn

1/2 zucchini, peeled and chopped

3 tomatoes, chopped

 

Dressing:

1 avocado

2 T. cilantro

1/4 c. apple cider vinegar

3 cloves garlic

1/2 lemon, juiced

1/2 lime, juiced

1 T. honey

salt & pepper to taste

 

Throw all of the ingredients into a food processor and voila!  This is a thicker dressing as you can tell by the picture.  If you would like a thinner sauce/ milder taste, slowly add water until desired consistency is reached.
