“Chorizo” Sweet Potato Nachos

Ryan’s family calls this recipe Chorizo, but there are a couple more ingredients to this delicious dish.  This is another simple recipe that is fun for a party or appetizer night!  I tried to make homemade sweet potato chips this time instead of bagged, and while they were awesome and crisp when pulled out of the oven, they quickly got soggy with everything piled on top.  They were delicious, but I will keep working at it!  Until then, the ones from the store do taste awesome 🙂

“Chorizo” can be made without onions and/or tomatoes if necessary and still taste awesome!



1 lb. 93/7 beef

1 lb. pork chorizo

30 oz. can Refried Beans

16 oz. can diced tomatoes

1 med. onion, diced


Brown beef and chorizo in a large stock pot/pasta pot over medium heat until just a little pink is showing.  Drain grease.  Add remaining ingredients and stir together, turn heat to medium low, cover and simmer for 30 minutes.

Put it in tacos, as a chip dip, or nacho topper.

This time we added it to sweet potato chips and topped with tomato, avocado and green onion.
