Chicken Sausage Stir Fry with Cauliflower Mash

This is another staple recipe in my house because it is so easy!  There is a market in my neighborhood with an awesome meat counter that has at least 10 different flavors of sausage.  Tonight I chose a Southwest Chicken Caliente Sausage, but I typically get an Andouille.  Depending on the night, how much time I have, etc. I will either pan cook the sausage or grill them up.

Ingredients:

2 lb. Sausage

2 heads of cauliflower

1 lb. sliced mushrooms

1 large yellow onion, sliced

3 bell peppers

In one large pan, saute sausage until cooked.

In another large pan, place chopped mushrooms, onions, and peppers, and cover.  Steam for about 20 minutes, turning everything over about every 5 minutes.

 

Cut cauliflower stems and throw into a medium pot with a cup of water.  Cover and steam over medium heat for about 20 minutes or until soft.  When cooked add to a food processor and season as you like.  Sometimes I use garlic powder and a pinch of salt, other times I will leave it plain.

Cut sausage into pieces and add to cooked peppers and onions.  Stir and done!
