Cajun Shrimp Tacos with Chipotle Lime Sauce

I was inspired by all of the food porn Facebook posts on Cinco de Mayo to create some sort of delicious and paleo taco dish.  After debating for a while between beef and shrimp tacos, I decided on shrimp, but because I already had it in my freezer.  Yup, a delicious shrimp taco meal made from laziness.

Shrimp Tacos

This recipe makes 3 servings, even though Rush (3yrs) and I ate them all in one sitting.  I shudder to think of what my grocery bill will be when these guys become teenagers!


I have had bad luck making my own tortillas before, but thought I would give it another go.  I kind of failed again because you can’t actually hold it like a taco or it will fall apart (insert super annoyed angry face).  BUT, I thought they were delicious!  I spread everything out on it, kind of like a tostada and ate it with a fork.  It soaked up the chipotle lime sauce perfectly and I actually did a little dance when I ate it because it tasted that good.  I might be weird, but I LOVE when healthy food satisfies my cravings!  It is quite a bit of extra work to make them over buying them, so it’s up to you if you want to take a gamble making these.


1/2 c. Almond Flour

1/2 c. Coconut Flour

2 Eggs

1 tsp. Olive Oil

1/4 tsp. Salt

Mix ingredients together.  It will seem kind of flaky, but that’s ok.  With your hands, form it into a ball on a flat surface and then roll with a rolling pin until it’s about 1/8 inch thick.  If it’s getting too sticky to roll, wet the rolling pin with water and go at it again.  To make the circle, I used a kids bowl and pressed firmly.  To unstick from the mat, go around the edges with a spatula and it will come right up.  Place on non-stick aluminum foil.  Bake at 300 degrees for 8 minutes.  Let cool completely.

1 lb shrimp

Cajun Seasoning (used- Dean’s Naturals)

1 tsp. Coconut Oil

Thaw shrimp if necessary, peel and devein.  Heat coconut oil in skillet over medium heat.  Lightly coat shrimp with Cajun Seasoning.  Stir and flip shrimp until thoroughly cooked – solid pink.


Chipotle Lime Sauce

1/4 c. Canned Coconut Milk

1 Tbsp. Fresh Lime Juice

1/2 tsp.  Chipotle Seasoning

1/4 tsp. Garlic Powder

1/4 tsp. Salt

1/4 tsp. Cumin

1/4 tsp. Dried Cilantro

Simply mix all ingredients together and enjoy this light sauce.  It will be quite thin.
