Avocado Deviled Eggs

By  |

It isn’t a holiday or celebration in my family without deviled eggs.  Those mayo filled treats are something I always look forward to, but oh man, put them in your Myfitnesspal and you won’t be eating anything but lean meats and plain carbs for the rest of the day.  I’m not saying I won’t splurge on special days, but if there is a delicious alternative so I can enjoy those fat grams elsewhere, I’m all for it.

For the record:

1 Tbsp Mayo has 100 calories and 11g of fat

1 Tbsp Avocado has 30 calories and 3g of fat

My boys LOVE deviled eggs and LOVE avocado, so naturally they were perfectly ok with the substitution.  My dad even said that he prefers this version as it is a bit more mild than the original.  I am so happy I could take a family classic and make it healthier for everyone.

I do want to note though, that replacing mayonnaise with avocado isn’t just a straight up substitution.  I had to manipulate the rest of the ingredients to maintain that classic deviled eggs flavor. Just something to keep in mind when using avocado in place of mayo in other recipes!

6 Eggs

1/4 c. Avocado -mashed (about 1/2)

1 1/2 tsp. White Vinegar

1 1/2 tsp. Yellow Mustard

1/2 tsp. Salt

Paprika for garnish

  1. Boil eggs.  Place eggs in pot and fill with water enough to completely cover eggs.  Bring to boil.  Remove from heat and let sit for 10 minutes.  Drain water and run under cool water until pot is no longer hot.  Throw in some ice and let them completely cool for a while – about 20 minutes. *Tip: Make some extra while you’re at it!  They are a great snack for you or the kids.
  2. Slice eggs in half and remove yolks.  Add yolks and other ingredients to a bowl and blend (I like to use the hand mixer).
  3. Spoon mixture into eggs.  Pro tip:  Add mixture to a sandwich size Ziploc bag and cut off the end.  Squeeze mixture into egg halves.
  4. Fancy up those avocado deviled eggs with some Paprika!  Other yummy toppings would be bacon, green onion, jalapeno, radish, olive, pickles… whatever sounds good to you!

Are you ready to give this healthier deviled eggs substitute a try?  I bet once you do, you’ll never go back!
